Chilli and lime roasted tomatoes….
Chilli and lime roasted tomatoes is one of my favourite quick and easy recipes - it's perfect for when we have people round and even better when I'm on my own as I don't have to share. ;-) All you need to make it are a pack of cherry tomatoes, one or two limes (depending on how juicy they are), a couple of garlic cloves and a fresh chilli. Some basil leaves finish it off lovely if you're feeling posh but more often than not, I make it without. You don’t always have to be Nigella in the kitchen….
As much as I love reading foodie blogs, they do sometimes make me feel a little bit inadequate with their delicious sounding recipes accompanied by photos that look like a professional photographer took them. My recipes are more practical than creative and if I want a nice stylish foodie shot of what we're having for tea it usually takes me so long to get a shot that I like that the meal everyone else is half way through theirs before I sit down. Malteser Cupcakes….
A couple of years ago, I used to have a regular Sunday post called Cupcake Sunday where I would bake a different type of cupcake every week and share it with you (if it worked)! But then somewhere along the line, I stopped doing it and around the same time, I kind of forgot just how much I love baking. Crocktober – the third week….
We're still enjoying taking part in Crocktober but I'm starting to run a little short of ideas now so it looks like Google is going to be my friend this week. ;-) Monday We had beef stew on Monday although I got a bit potato happy with it and it looks in the photo like it was actually potato stew! It was delicious though and tasted really nice with some home made Yorkshire puds! Tuesday Last nights beef stew leftovers went in a pie although I strained most of the gravy off so the pie wasn't soggy. The gravy was heated up separately and poured over the pie.
