For the longest time, I was convinced I wouldn't like overnight oats. The name just made me think of cold, soggy porridge that had been forgotten about in the fridge overnight. It didn't sound remotely appealing and, despite hearing people rave about them for years, I never felt tempted to give them a go.But I needed to get better at breakfast and in order to do that, I needed to be able to just grab something from the fridge and eat it as I knew I just wouldn't bother if it wasn't easy as I've never been a breakfast person. I gave them a try, and I couldn't have been more … [Read more...]
Basic Quiche Recipe – perfect for using up leftovers….
My basic quiche recipe is one that I learned from my Mam years ago. I always used to look forward to her baking days because they were wonderfully predictable. There would almost always be a quiche, a corned beef pie and a cake chosen from her well-thumbed Be-Ro cookbook.I can still picture her standing in the kitchen with that cookbook open on the worktop, deciding which cake to make while the quiche and corned beef pie were already well underway. Looking back, I think those baking days are probably the reason I still love making simple, homemade food now. They're some of my happiest … [Read more...]
What we’re eating the week before Pay Day….
The week before payday is always the week that I try to work my way through the freezer and cupboards to use up some of the things we already have in.Years ago, I started doing it out of necessity because money was often a bit tight by the time we reached the end of the month. Back then, it was a way of stretching the budget until payday arrived. These days, it's much more of a habit than a necessity, but it's one that's stuck as I quite like having a bit of a reset before the big monthly shop. It helps clear out the random bits that have accumulated in the freezer, uses up anything … [Read more...]
I Got a Pie Maker for Free… Sort Of…
One of my friends popped round for a catch up a couple of weeks ago and it was the first time they'd been since we moved house so they got the obligatory tour of the house, ending in the kitchen where we put the kettle on and chatted while we waited for it to boil. She spotted a couple of my kitchen gadgets which got us talking about some of the random gadgets we both own and as we chatted, we both realised that we had a stack of kitchen gadgets each in our kitchens - some of which we use all the time and some are just gathering dust at the back of the cupboards. Somewhere in the … [Read more...]
Instant Pot Chicken and Rice….
This Instant Pot chicken and rice recipe is one of those meals that I still think about, which probably sounds a bit dramatic considering we’re talking about rice in a bowl, but honestly, it was that good.I don’t actually have my Instant Pot anymore, which is one of those practical decisions that made sense at the time but still makes me a bit sad. We simply didn’t have the space for it in our old house, so it had to go, but I really do miss it. There were a few things I made in it regularly, but this chicken and rice was the one meal that everyone loved and the one I could make without … [Read more...]
The Best Potato Salad Recipe in the World (not even exaggerating)….
I'm not even exaggerating when I tell you that my potato salad recipe is the Best potato salad recipe in the World! It’s actually the only thing I make that has people asking me for the recipe afterwards… which feels like a proper badge of honour if you ask me. 😂 I first made it about five years ago when I was trying to recreate a potato salad I’d eaten at a barbecue the week before. You know how that goes — you have something amazing somewhere else and then spend ages trying to work out what made it so good. Well… in trying to recreate it, I somehow ended up making … [Read more...]
