Slow cooker shredded chicken is one of those things that I make so often that I almost forget it’s worth writing about — until I realise how much I rely on it. I shared it in a five frugal things post recently but as I was making it again today, I thought it was worth a blog post of it’s own.

I used to make shredded chicken all of the time in my Instant Pot, but I don’t have that anymore (which hurts me 😁) and for ages, I just stopped making it because it honestly never even crossed my mind to try making it in the slow cooker… until one day it did.
This version of shredded chicken is slower to make but aside from that, it’s just as easy, if not easier to make. And having it ready in the freezer has made so many meals quicker and less stressful.
Why I always keep shredded chicken in my freezer
This is one of those quiet, building block foods that makes everything else easier.
I use it in all sorts:
- soups
- salads
- curries
- stir-fries
- wraps
- pizza toppings
- quick fried rice (I usually use cauliflower rice)
- quesadillas
- yorkshire pudding wraps
The list could go on… It’s neutral, adaptable, and ready to go which makes it a great thing to keep in your freezer.
What you’ll need
• Chicken breasts (as many as you’ve got — I often use reduced ones)
• Salt and pepper
• A little water or chicken stock
That’s it.
I keep it simple because I don’t want to limit what I can do with it when I’m adding it into my meals. Basic and plain means that this works just as well in a soup or a salad as it does in a curry or a quesadilla.
How I cook it
Whenever I spot reduced chicken breasts, I grab them. I usually come straight home and get them into the slow cooker straight away, often overnight as the reductions I spot are mainly on a night if I pop in after work.
I lay the chicken breasts in the slow cooker, season lightly with salt and pepper, then add a splash of water or stock — just enough to stop them catching, not to drown them.
I cook them on low for around 8 hours but if I’m cooking them overnight then it’s often longer than this and I’ve never had a bad batch.

Shredding and portioning
Once the chicken is cooked, it should pull apart easily with two forks. I let it cool slightly, then shred it and mix it back through its own cooking juices so it stays moist.
Then I portion it up for the freezer. This is the bit that makes it really work for us.
I freeze it in:
• single portions — for adding to soup, salads, or as a pizza topping
• two-portion packs — perfect for me and my partner if we’re making something like a curry or egg fried rice
• a larger portion — for when there are more of us and it’s being used as the main part of tea
I label the bags, flatten them so they stack nicely, and pop them straight in the freezer.
How I use it straight from the freezer
Because it’s already cooked, it defrosts quickly and reheats easily. I often:
• add it straight to soups
• throw it into a pan with spices or sauce
• stir it through rice or veg
• scatter it over pizzas or flatbreads
It’s one of those things that quietly earns its place in the freezer.
Why this works for real life
This is the kind of food prep that doesn’t really feel like food prep because there are no chopping marathons or complicated plans involved. It’s just about taking advantage of what’s available and making life a little bit easier for future me. 😊 If I can turn a pack of reduced chicken into several easy meals just by letting the slow cooker do most of the work, then that’s a definite win, and having things like this ready and waiting in the freezer always makes the rest of the week feel so much more manageable.
