Last night Mr Frugal finished work at 8 and walked half a mile to get me a Chai Latte from Costa Coffee as a treat as he knew I was feeling poorly. He was gutted when he got there and they were closed bless him but it was a lovely thought so I’m making my version of a Chocolate Fudge cake as a treat for him when he comes in tonight.
Chocolate Fudge Cake
For the cake:
175g sugar
150g butter
3 eggs
150g self raising flour
25g cocoa powder
1 tsp vanilla essence
2tbsp golden syrup
For the icing:
500g icing sugar
50g butter
150g melted milk chocolate
milk
- Cream the butter and the sugar together.
- Add the eggs, vanilla essence and golden syrup and mix together thoroughly.
- Fold in the flour and the cocoa.
- Separate the mixture into two round cake tins (silicone molds are great too) and bake at around 190 c for 15 ish minutes. The cakes cooked when you can poke it with a skewer or knife and it comes out clean.
- Leave them to cool fully.
- Next for the icing which is the easy bit – add the icing sugar, butter and melted chocolate to a mixing bowl and mix. Add milk until it gets to a smooth spreading consistency – you shouldn’t need too much.
- I like to sandwich the cakes together with a bit of warmed cherry jam and some of the chocolate fudge icing. The rest of the icing I use to smother the cake in chocolatey goodness!
