
This is the third week I’ve been ill and it’s really starting to get me down a bit now – I have no energy, I feel bleugh and I can’t stop coughing! The Dr has just signed me off work for a week and prescribed me with some stronger antibiotics and some steroids so fingers crossed I should be sorted soon…. This weeks meal plan reflects my lack of energy as I’ve cut as many corners as possible 😉
Monday – Sunday Dinner leftovers – I cooked extra potatoes and yorkshire puddings yesterday so all I had to do today was zap them in the microwave, cook some veggies and serve with the leftover chicken from dinner yesterday.
Tuesday – Naan bread pizza’s with potato wedges.
Wednesday – Macaroni cheese
Thursday – Slow cooker chilli
Friday – Chicken and mushroom pasta
Saturday – Jambalaya
Sunday – Sunday dinner with roast lamb, Yorkshire puddings, roasties and veg.
I’m in real need of comfort food at the minute so we’ve just had a lovely peach cobbler and custard for pudding – it was delicious and even in my energy depleted state (yep, feeling very sorry for myself), it was really easy to make….
Peach Cobbler












A frugal trick from my Mother was to use the fruit juice to replace the liquid in cobblers and cakes with fruit added. Makes the batter even more yummy and fruity tasting.
I made this yesterday, and it was delicious! Really simple, and very tasty. I used canned peaches, although they did rise to the top as soon as I put the batter in! Not sure why, but it was still gorgeous! x

I love cobblers, they are so simple to make. I have some pears from my tree, so must do a pear one. Don't forget to add this to Frugaliscious mrs

Mmmm Thanks for sharing, giving that a go! Im gluten and dairy free so i'll let you know how it turns out! I think i'll pop some tinned pinapple in mine, i've been needing an excuse to use it but don't always like it out the tin x
I love tinned pineapple – I'm going to make one with some soon – what about adding coconut to the mix. I'm not sure if that would work but my mouths watering so I think I'll have a go x
