Wild garlic is one of the easiest foods to forage for because it’s found in pretty much every area of woodland from late Winter to early Summer and this fresh wild garlic pesto recipe is the perfect recipe to make with it!
If you go for a walk right about now and you go anywhere near a field or some woodland then the chances are that you’re going to come across some wild garlic growing and if you do, then I have the perfect recipe for you. This wild garlic pesto is a great twist on traditional pesto and I’m pretty sure you’re going to love it.
In case you’re wondering, this is what wild garlic actually looks like…
As you can see, wild garlic is quite distinctive to look at so you should be OK to identify it but if you’re not 100% then the best way to check that you’ve actually found picked wild garlic then you can just crush the leaves in your hand and have a sniff. If it smells like garlic, then you’re good to go.
Wild garlic pesto is great as a salad dressing or as a dip for crusty bread and if you can’t find wild garlic then you can go with basil leaves instead for a more traditional pesto.
I blend mine together in small batches as my food processor is one of those mini ones. If you have a fresh lemon, then some lemon zest would be fab in this too!
