I’m back today with another #BetterWithLeerdammer sandwich recipe for you all to try for lunch and today’s is a delicious cheesey tuna crunch sandwich. We’ve just had this for our lunch and I can’t believe how much we all enjoyed it. It just shows you that a simple tuna sandwich can be so much more with just a few quick additions.
If you missed yesterdays post then you probably won’t know what I’m going on about when I say that my recipe is #BetterWithLeerdammer but basically, I’ve been challenged by Leerdammer team to create a different sandwich for every day this week as part of their #BetterWithLeerdammer campaign. I made a Mexican cheese sandwich yesterday and today is the turn of my amazing Cheese and Tuna Crunch Sandwich recipe.
Here’s the tuna crunch part of today’s lunch….
This is so much tastier than just normal tuna mayo and I’ve already had requests to make it again for tea! All you need to do to make tuna crunch is mix 2 tins of tuna with 1/2 finely diced green pepper, 3 finely chopped spring onions and about a 1/3 cucumber chopped up with however much mayo you want to add.
I was intending to make a traditional sandwich with two slices of freshly baked bread (I should add that it wasn’t me who did the baking of the bread) but I cut the slices a little too thick so I thought I’d make it into a bit of an open sandwich affair. I added two slices of delicious Leerdammer to the bread and then piled on the tuna crunch before topping off with some lovely peppery rocket which I thought set the sandwich off lovely but everyone else promptly removed and ate theirs without rocket!

That's certainly an interesting combination. Not sure I'd like it though. Leerdammer on its own – any day of the week, but with tuna on top, I'm not so sure x
