I’ve just had a tidy out of my kitchen cupboards!
I’m not sure what came over me – I went in to the kitchen to make a cuppa, noticed how messy the cutlery drawer was and it just spiralled out of control from there…. I found all sorts of weird and wonderful things, including cider vinegar that I have no recollection of buying, vanilla sugar that I forgot I had and lots of herbs and spices that I have no clue what to do with.
One thing I did find that I was quite pleased with was a small amount of pudding rice so I thought that I would cook the kids some homemade rice pudding for after their tea tonight as it’s perfect for these miserable wintery nights.
100g Pudding Rice
1 – 2 Capfuls Vanilla Extract
1 -2 tbsp Sugar
Butter for greasing
Grease a large oven proof dish/bowl with the butter and pour in the pudding rice. Add the milk, sugar and vanilla and give it a quick stir together.
Bake in the oven for about 2 hours at 160 c.
I always check on it a few times while it’s cooking and every time I do, I give it a quick stir and remove the skin from the top as the kids won’t touch it if it’s got a skin on it but I know a lot of recipes say to leave the skin as it’s the best bit. I can’t see it myself – it just looks disgusting.
It’s gorgeous hot and I would guess it’s just as nice cold but we always serve it straight from the oven with a big dollop of raspberry jam and it’s never around long enough to go cold.
The timing of my kitchen cupbaord cleaning fever is ideal, if I hadn’tcleaned out the cupboards I wouldn’t have found the rice and if I hadn’t found the rice, I would never have been able to share with you my favourite one-pot recipe 😉 Which just happens to be the subject for this week’s Friday club…..
