I use a coconut oil spray..the same as frylight 1 calorie per spray. Spray it over the butternut squash and sweet potato and roast them before adding it to the soup it still adds the coconut flavour without the syns 🙂

Do you think I could substitute something for pumpkin in this? The boys want to carve one and I don't want to waste it all!! Any ideas appreciated.

All butternut squash soups need chilli or a bit of cayenne pepper in my opinion

I meant that coconut milk isn't very good for SW – Iit's a long time since I followed the SW "diet" but I would imagine that coconut milk is rather syn-orific! But can you get half fat coconut milk in the UK?

Not so good for Slimming World, but add some coconut milk to this, plus a bit of grated ginger & garlic and it is even better!
