As part of my frugal reset, I’ve been sharing our weekly meal plans on here again and I’ll be honest, I’ve really enjoyed the old school blog posts again along with the accountability that I get from sharing something with you all!
How on earth is it May already?
I read somewhere this week that there’s only 32 Sundays until Christmas. 😁 This year is flying by and I feel like if I’m not careful then I’m going to blink and Summer will be here and gone!
I feel like you can tell that I’m in ‘make the most of Summer mode’ looking at most of the meals I have planned although it wasn’t intentional and I only noticed myself when I looked back at the menu planner as I put it up on the fridge. I feel like aside from today’s meal and next Sunday’s, the meals can be eaten outside and that’s where I hope to be if the weather is as nice as it was last week.
The weather app is telling me that it won’t be but I can hope, can’t I?
As always, I share the basis of what our meals will be for the week, what I don’t do is share all the extra bits that I serve along with each meal. There’s always plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all.
Anyway, let’s get on to the meal plan…
Monday – Brisket and veggies
We had a brisket joint in the freezer that we bought for a Sunday Dinner a couple of weeks ago but we ended up going out for the day so had something different for tea in the end so it ended up in the freezer.
I got it out last night and defrosted it overnight and it’s now in the slow cooker.
I was going to pop some potatoes in around it to cook but I decided not to basically because I was being lazy this morning but I’ll make it up later on – I’ll pop some veggies in the oven to roast about 40 minutes before I’m ready to serve it. I think we have carrots, potatoes and brocolli that will all be nice roasted.
Tuesday – Jacket Potatoes
Jacket Potatoes are a regular feature on our meal plan because they’re super easy to cook and they’re so versatile – you can just have whatever you fancy on them on the day whether it’s beans and cheese, egg mayo (don’t judge me!) or something like slow cooker mince which we always have portions of in the freezer.
I’ve just started cooking our jacket potatoes in the Air fryer and I’m a huge fan of cooking them that way as it’s so much quicker to do them that way. 40 mins from start to finish for a good sized potato and they taste just as good as they do when they’re done in the oven.
Wednesday – BBQ / Cajun Chicken
I’m out with the kids on Wednesday night so I’m secretly hoping that they will treat me to a nice tea out like they did last time we went out. Just in case that doesn’t happen, I have some chicken in the fridge that I’ll cook when I get home if needed.
I even have extra chicken in case I need to cook for them too because even though they’re grown up, I’m pretty sure that they’ll want feeding if we don’t eat out. I have cajun and BBQ sauces that I can add to the chicken depending on what everyone fancies.
And I can easily make up some spicy wedges or spicy rice to go with the chicken for them and I’ll have my usual roasted cherry tomatoes.
Thursday – Burgers and Wedges
Super simple tea tonight using up some random burgers that we’ve had in the freezer for a while. We went wild and bought minted lamb burgers but every time we consider eating them for tea, we go for something else instead. This time we’re going to have them! 😁
Friday – BBQ
This is the hottest day of the week according to the weather app so I’m hoping it’s warm enough to cook and eat outside.
Saturday – Homemade pizza
We found a little farm shop last weekend and ended up buying some lovely, locally grown fruit and veg. The roasted veggies that went with the brisket were from here, as were the jacket potatoes and the cherry tomatoes.
They also had a freezer of food you could buy to defrost and cook at home and one of these things was homemade organic pizza dough rolled into balls of dough and frozen. I’m going to defrost them and make pizza for tea with them.
Sunday – Sunday Dinner
I think I’m going to do a Chicken dinner this week with some Yorkshire Puddings, a few roasties and the last of the veg from the farm shop (or if it’s all gone then we’ll go back and get some more).
And that’s what we’ll be eating this week!
