As part of my frugal reset, I’ve been sharing our weekly meal plans on here again and I’ll be honest, I’ve really enjoyed the old school blog posts again along with the accountability that I get from sharing something with you all!
Meal planning makes me feel more organised and saves me time and money, every single week.
Since I got back into meal planning (after an expensive break from it 😁), I’ve really enjoyed spending time on a Sunday planning what we’ll be eating over the coming week. I love the feeling of being organised when I go to the shops using the list I’ve written and even more so, I love the knowledge that I’m saving money with every meal planned.
I’m starting to introduce new meals each week as one thing I have found since I started meal planning again is that I stick to the same meals for the most part and I don’t want to get stuck in a rut which I can see will be easy to do!
As always, I share the basis of what our meals will be for the week, what I don’t do is share all the extra bits that I serve along with each meal. There’s always plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all.
Monday – Jacket Potato night
I know it’s Easter Monday but Big A is on nights tonight so I want a quick tea that he can have before he leaves for work at around 5.15pm. Jacket potatoes are filling and pretty versatile so I can serve it with anything from cheese and beans to slow cooker mince. Pretty sure we’ll go for cheese and beans as mince is on the menu on Tuesday night. 😁
I’ve just started cooking our jacket potatoes in the Airfryer and I’m a huge fan of cooking them that way as it’s so much quicker to do them that way. 40 mins from start to finish for a good sized potato and they taste just as good as they do when they’re done in the oven.
Tuesday – Slow cooker mince and dumplings
This is my standby meal as it’s so easy to cook and I can get it going before work in under 10 mins and then just leave the slow cooker to do it’s thing while I work. By the time I finish work, it’s ready to serve up and without fail, it tastes amazing!
It’s an inexpensive, tasty meal that always work’s well on a night shift! Big A will often pop some in a tub to heat up through the night if he gets hungry so it makes packed lunch packing easy too.
Wednesday – Minted lamb chops
This is a new one for us but I’m going to have a try at cooking minted lamb chops on Wednesday night. I actually read the recipe in an Airfryer cook book but I’m not actually sure if I’m going to cook it in the Airfryer as I want it cooked perfectly and I’m not sure just how long to cook it for.
Thursday – Spaghetti Bolognaise
We have all the kids again for tea on Thursday and one meal that I know everyone will love is slow cooker spaghetti bolognaise. It’s super simple to make and takes barely any effort to serve which is what I want as the last thing I need is to be faffing around in the kitchen when the kids are here.
The effort, if you can call it that, is all going to be on the morning when I throw everything into the slow cooker. When it’s time to serve, I just need to cook a load of spaghetti and I can serve it up in minutes.
I’ll probably do some garlic bread with it as well as I have a couple of baguettes in the freezer that need using up.
Friday – Birthday Tea
We have a 12th Birthday celebration planned for Friday night so tea out will be her choice of tea – whether it’s a favourite meal at home or a meal out.
Saturday – Chicken wraps and wedges
We’re actually out on Saturday afternoon so I want something quick and easy to cook when we get home so I thought chicken wraps with some salad and spicy wedges might work well for tea. I’ll just cook some chicken with some kind of spice – probably peri-peri and then add the same spice to some potato wedges that I’ll pop in the Airfryer. Add a quick salad and we’re good to go.
Sunday – Steak night
I’m really hoping for some nice weather next Sunday so we can barbecue the steaks as the last time we did that, they were amazing. I’ve had a look at it looks warm but it could rain at some point during the day which could potentially ruin my plan. 🌧
And that’s what we’ll be eating this week!
