As part of my frugal reset, I’ve been sharing our weekly meal plans on here again and I’ll be honest, I’ve really enjoyed the old school blog posts again along with the accountability that I get from sharing something with you all!
Meal planning makes me feel more organised and saves me time and money, every single week and these weekly posts, as old style as they are, really help keep me accountable for sitting down and making my plan each week and then through the week, actually sticking to it.
I am going to hold my hands up though and say that at least once a week, sometimes twice, we don’t stick to what we had planned. There’s a couple of reasons for that – one is because plans change and another is because sometimes, we just don’t fancy what we had planned.
We make it work when we change our plans though. 😁
Sometimes we just move everything on a day, sometimes what we had planned goes in the freezer until the next week and occasionally, tea becomes lunch the next day in one form or another.
So this week’s meal plan is all about using up what’s in the freezer because it’s getting a bit full right now.
As always, I share the basis of what our meals will be for the week, what I don’t do is share all the extra bits that I serve ng with each meal. There’s always plenty of salads and vegetables as we’re trying to be much more health conscious at the moment with more healthy food and more exercise happening for us all.
Monday – Chicken Surpise
Not a clue what we’re having but I know it’s chicken related because I took the chicken out of the freezer last night to defrost. I like cooking chicken for us as I can make it work for us both easily – I usually have mine with Cajun spice on served with roasted tomatoes and Big A will often have have his in barbecue sauce with some rice.
I like to think that I’ll do something different tonight but I am 99% sure that I’ll just do the usual. 😁

Tuesday – Slow cooker mince and Jacket Potatoes
I have a big batch of slow cooker mince in the freezer from a couple of weeks ago so that’s coming out ready to be served on some jacket potatoes that I’ll cook quickly in the Air fryer.
I’ve just started cooking our jacket potatoes in the Air fryer and I’m a huge fan of cooking them that way as it’s so much quicker to do them that way. 40 mins from start to finish for a good sized potato and they taste just as good as they do when they’re done in the oven.
Wednesday – Freezer tea
I’m not cooking tea on Wednesday, it’s Big A’s night to cook so I’m just going to leave him to find something in the freezer that needs using up – it’ll probably be something super random but he’s really good with considering my diabetic needs so I know it’ll work for us and that it’ll use up something from the freezer to make some space.
Thursday – Homemade Pizza Calzones /Meatzza
I have some mince in the freezer that needs using up so I was planning to make a meatzza for me which is a great way for me to at least pretend that I’m eating pizza. 😁
I’m going to cook some of the mince separately with a little bit of spice to use as a topping on the pizza calzones I’m wanting to make for Big A. I used to make Pizza Calzones for the kids all of the time and I thought I’d have a go at making some spicy mince calzones this week – let’s see if they look neater than the ones I used to make.
Friday – Spaghetti Bolognaise
I cooked way too much spaghetti bolognaise last time I made it as we got our mince from the reduced section and it was a 1kg pack rather than the usual 500g pack that I usually use when I’m cooking it. As a result of my over enthusiastic portion sizes, I have a full portion in the freezer that I’ll use up this week.
There is never anything other than clean plates in this house when I serve this which is why it’s a regular on our meal plan.
Saturday – Chicken wraps and Spicy rice
We have plans on Saturday afternoon so I want something quick and easy to cook when we get home so I thought chicken wraps with some salad and spicy rice would be a nice easy option for tea. I’ll just cook some chicken with some kind of spice – probably peri-peri and then add then make some spicy rice to go with it along with some salad.
Sunday – Minted lamb steaks
This was planned for last week but I was hoping for Barbecue weather and that didn’t work out for us. We ended up going out for a walk and bought a bag of chips from the chip shop on the way to eat at the duckpond in our village. We came back from our walk and finished out tea off with some strawberries that we bought earlier that day which was enough for tea for us.
We popped the lamb steaks in the freezer instead so I’ll just get them out again on Saturday night ready to cook again on Sunday. I’m actually not sure what I’ll serve them with though. 🤔
And that’s what we’ll be eating this week!
