Being a diabetic, I often feel like I’m missing out on certain foods so now that I feel like I’ve got a bit more of a handle on managing my diabetes, I’m trying to look for diabetic alternatives to the foods I enjoy so that I can continue to enjoy them. Today, I’m going to share my recipe for Airfryer low carb pancakes.
I’ve recently started to use almond flour as an alternative to normal flour because it has a much lower carbohydrate content which makes it better for diabetics. It contains around 21g of carbohydrates per 100g compared to normal flour which typically has around 76 grams of carbs per 100g.
My recipe makes 20 pancakes which means that each serving of two pancakes is 117 calories and just 1.6 carbs.
It’s perfect for this recipe for my airfryer pancakes as it gives them such a lovely flavour and unlike lots of diabetic recipes that I’ve tried this last year, it tastes like something I would eat whether I was diabetic or not. I can make a batch of them and the kids will eat them with me not having a clue that they’re a ‘healthier’ version of pancakes.
I would say that almond flower does have a higher number of calories per 100g at around 570 calories compared to normal flour which is around 370 calories for the same weight. It’s not a huge difference per pancake when you take into account the number of pancakes that this recipe makes but I did think it was worth pointing out.
I make these pancakes in the airfryer rather than a pan because almond flour tends to blacken a lot quicker in the pan when cooked that way. I say blacken rather than burn as the first few times I made this, I did it in a pan and the pancakes looked like they were burnt to a crisp but they actually tasted OK.
I enjoy my food less black though so I experimented with making them in the airfryer and they were a success from the first go.
These low carb airfryer pancakes are great for me as a diabetic. They're super easy to make and really tasty. This recipe makes 20 pancakes but they're quite small so one portion is two pancakes. Most of the time, three minutes is fine and they'll be done but every now and again, a batch needs an extra minute. So if the first one I take out doesn't come out of the mould with a gentle tap on the top when it's upside down then I pop it back in for a minute.Low Carb Airfryer Pancakes....
