Today I’m sharing my recipe for amazing blueberry and banana muffins.
**Spoiler Alert** You’re going to LOVE them. 😉
Over the weekend, I had a couple of bananas and a punnet of blueberries that needed using up and the easiest way I could think of was by making some homemade blueberry and banana muffins. They were so delicious that everyone came back for more – I’ve even had to hide the last one for me to enjoy when I get in from work this afternoon!
Bananas and blueberries are a great flavour combination and these muffins are so tasty that you’ll definitely be making them again once you’ve tried them!
How to make homemade blueberry and banana muffins
3 large ripe bananas
1 egg, beaten
75g butter, melted
1-2 handfuls blueberries
1 teaspoon baking powder
1/2 teaspoon salt
180g self-raising flour
Preheat the oven to around 180 c
- Mash the bananas and add the sugar.
- Give it a good mix and then add in the egg.
- Once that’s mixed together add in the blueberries and the dry ingredients and gently mix it all together.
- Spoon the mix into 12 cupcake cases and pop in the oven for approx 20 minutes.
