I’m continuing my Love your Leftovers series with today’s post all about how to use up those leftover roast potatoes!

Leftover roasties are already full of flavour, already crispy on the edges and they’re just what you need to create a whole new meal with hardly any effort at all. Whether they’re left over from a big Sunday dinner or you’ve accidentally made enough to feed a small village (we’ve all done it 😂), leftover roasties are pure gold and I guarantee you can transform them into so many other meals!
Here’s some of my favourite ways to make the most of them… 😊
1. Loaded roasties
Slice your roasties in half, sprinkle with cheese and pop them in the airfryer or oven until melted and golden. Add bacon bits, spring onions or even a spoon of leftover chilli if you’ve got some. Absolutely delicious.
2. Roastie hash
Chop the potatoes into cubes and fry with onions, peppers and any leftover veg. Add corned beef, chopped gammon, chicken or sausages if you’ve got them – any meat you have left over from your Sunday roast will work perfectly. Top with a fried egg and you’ve got a proper comfort meal.
3. Airfryer smashed potatoes
Press the roasties down gently with the back of a spoon until they crack open, drizzle with oil or spray with frylight, season and airfry until ridiculously crispy. These never last long in our house – mainly because it’s one of my favourites!
4. Spanish-style roastie omelette
Use leftover roast potatoes instead of fresh ones in a quick tortilla-style omelette. Add eggs, onions, peppers or spinach. It’s perfect for lunch and a great way to use up random fridge bits.
5. Roast potato frittata
Very similar, but baked. Add roasties to a dish with eggs, cheese and any leftover veg. Bake until set. It’s filling, cheap and brilliant hot or cold.
6. Roastie breakfast wraps
Warm the roasties, smash them a little and load into a wrap with scrambled eggs, bacon and a drizzle of ketchup or hot sauce. A very satisfying grab-and-go breakfast.
7. Roast potato curry
Honestly so good. Add chopped roasties to a quick curry sauce (jar or homemade), along with chickpeas or veg. They soak up flavour beautifully and make the curry extra filling. If I make this, I tend to not serve it with normal rice and would use cauliflower rice instead as this with rice is a bit too heavy for me.
8. Cheats patatas bravas
Toss roasties in paprika, garlic and chilli, airfry until hot and crisp, and serve with a quick tomato sauce or aioli. Perfect as a side or picky tea.
Leftover roasties are one of the easiest things to re-purpose because they’re already half the work done for you.
Whether you crisp them up again, chop them into something new or fold them into an easy breakfast, they always turn into something delicious. Hopefully this gives you a few new ideas next time you’ve got some hiding in the fridge.
