After reading about English Mum’s Cupcake Challenge and looking at the lovely cakes that others had made, I decided that I fancied trying my hand at making some tasty little works of art.
However, as usual in the Frugal House, things didn’t quite go according to plan. It beats me how everyone makes their cupcake icing look so perfect and why is it when I want my cakes to be quite flat on top they come out huuuuge?
We decided to make mini carrot cakes using the recipe that I followed last weekend (here). We didn’t have any lemons in so I thought we would use lime for the icing….
It didn’t start well when Miss Frugal decided that the mixture looked like sick and refused to even lick the bowl!

Excuse the green tinge – it possibly wasn’t the best idea to use lime instead of lemon!

Icing is a pig to pipe, it works better I find if it's slightly chilled. I love doing cakes etc and decided to make Christmas cupcakes for work instead of doing cards. I was v v proud of the results and the little sugar paste figures on top until I took them in to work on the passenger side footwell with the heaters ok, durhh they all melted, so domestic godess looked like the kids had done them!!
Oooh, but I bet they taste good though….don't worry if they look radio-active hun! lol
Bet they still tasted yummy! When ours rise that much we cut off the tops & stick them in the top like fairy rings to make fairy cakes although I usually have the opposite problem!
We haven't dared try the little green beauties yet lol
Oh but I bet the are delicious
