Mini Muffin Turkey and Red Onion Barbecue Pizza
1 English Muffin per person
Barbecue Sauce
Cheese
Red onion
Turkey
Salad to serve
- Half each muffin and spread each half with barbecue sauce.
- Top with some cooked turkey breast.
- Add some sliced red onion.
- Sprinkle on some grated cheese and grill until the cheese is bubbling and starting to turn golden.
Serve with a smile face salad for lunch and add some homemade wedges to make it into a meal for tea. From start to finish this recipe took me less than 5 minutes to make and because it uses lots of store cupboard ingredients (I always have muffins in the freezer and BBQ sauce in the fridge), it cost around £2.00 for a filling snack for all of us which is great.
