Leftovers Inspiration – Five ways to use up leftover Risotto or Paella….
Homemade Paella and Oven baked risotto are two of my all time favourite meals but I always end up with leftovers so I've been experimenting with different ways to use up the leftovers....These are really simple to make as all you need to do is make golf ball sized balls using the leftover paella / risotto. Then you just flatten them down and bake for around 20-25 minutes and you're done. Rocky Road fridge cake….
Every now and again, I am required to make cakes for some random reason and naturally, the night that I am required to bake these cakes always seems to fall on a night where we have at least twenty seven other things planned which means my cakes invariably end up being the ones that are left at the end looking lonely on the table with a reduced to 10p sign on them.But this week, I had a revelation after finding two big bars of cooking chocolate at the back of my cupboard. Slow Cooker ham in Coca Cola….
Foods like lemon and honey, tomato and basil, Nutella and peanut butter are all perfect flavour combinations. I wouldn't have put ham and Coca Cola on my list of favourite food combinations at all - until last night when we had slow cooked Coca Cola ham.My version of coca cola ham is a much simplified version of the Nigella ham in coke recipe as it doesn't have any fancy stuff in it ;-)It really couldn't be easier to make and the results are delicious.I always bring my ham joint to the boil in a pan for five minutes to get rid of any excess salt but I know lots of people … [Read more...]
Slow Cooker Leftover Frittata….
I've posted this week's meal plan over at Meal Planning Made Easy but for those of you who haven't ventured over there yet or don't meal plan, I wanted to share a recipe that I posted on there over the weekend. There doesn't seem to be enough hours in the day at the minute.I have so much to do but all I actually want to do is snuggle up on the settee and do nothing, especially since I bought myself a lovely new throw for the settee last night.
