The changeable weather at this time of year is definitely making meal planning a bit more challenging....The weather makes it difficult to know what to plan for tea at the moment! If I plan ahead for a roast dinner at the weekend, and then the sun comes out then everyone wants something lighter than a full on Sunday dinner because, let's face it, no-one fancies a big roast dinner while the sun's shining (or at least we don't).I've been quite vague with my meal planning lately to combat the changing weather that we're seeing at the moment. By vague I mean that I'll write a main … [Read more...]
Leftover Turkey and Ham Pie….
We were planning on just getting a chicken for this year's Christmas Dinner but at the last minute, we decided to buy a turkey crown, which we all know means lots of leftover turkey to use up! We had Turkey sandwiches for lunch and some sliced gammon and egg for tea on boxing day and last night we had amazing leftover turkey and ham pie.It was so delicious that I thought I'd share it with you because it's an amazing way to use up any leftover meats you have and you could also add leftover veggies to it if you don't use them all up in the bubble and squeak for Christmas Day … [Read more...]
Feed your Family for a Fiver….
Do you think you could feed a family of four a three course meal for under five pounds? Here's my menu....Starter - Potato skins with garlic mayo (15p) I really love potato skins as a starter when we go out for a meal but it never occurred to me just how frugal it was for the restaurant serving it as the dish is literally made with potato peelings that would otherwise be thrown in the bin!I was planning to do mashed potato for our main course so I used a sharp knife to peel the potatoes which meant I got a little more potato on the peeling if that makes sense. ;-) I then just … [Read more...]
What we ate in a week {November 2017}….
I thought I might start a new monthly series on the blog called 'What we ate in a week' which is, as the title would suggest a post about the food we ate in a week! ;-)My plan is to start writing this post the Monday before you read it each month and simply update it each night with a photo of what we had for our tea that day so let's give it a go.... MondayWe made some really quick and easy fajitas for tea tonight with some sliced yellow and green peppers and red onion gently fried in a little olive oil with two chicken breasts that I remembered to get out of the freezer last … [Read more...]
Five reasons why you don’t meal plan….
If you already plan your meals in advance then this post probably isn't for you but if you don't you really should read on because planning your meals will save you time and money every single week!1) I don't have time! OK, I get that meal planning can take a little bit of time once a week but it's totally worth it for the time you save during the rest of the week.I spend about twenty minutes on a Sunday morning having a quick look at what food we already have in and writing a meal plan based on that which I then use to write my shopping list. That extra time on a Sunday morning … [Read more...]
Spicy Butternut Squash and Sweet Potato Soup {Healthy, Delicious and great for Slimming World}….
This Spicy Butternut Squash and Sweet Potato soup has been in my top ten posts every single day since I published it way back in January 2016 and since I'm making a batch for the freezer right now, I thought I'd share it with you again today!Remember I told you that my favourite Christmas present last year was a soup maker?Well, the novelty hasn't worn off and I'm using it just as often as I predicted I would when I first wrote about it.Most soups that I make in there don't really have a recipe that I can share with you because more often than not, I literally just … [Read more...]
