Every Halloween, more than 20 million pumpkins are sold ready for Halloween and from what I understand, around 18,000 tonnes of edible pumpkin ends up in Landfill once the candles are blown out and the trick-or-treating is over.
When the kids were growing up, we’d have four big pumpkins every year and have a competition to see who could carve the best one. We roasted the seeds a couple of times and I made pumpkin soup once or twice but more often than not, I would just get rid of the insides as I’m sure the majority of us do.
It’s such a waste, especially when pumpkin is delicious, versatile, and packed with goodness so this year, if you’ve got leftover pumpkin this year, here are some easy and budget-friendly ways to use it up.

1. Make Pumpkin Soup
A classic for a reason! Pumpkin soup is warming, filling, and cheap to make. Blend roasted pumpkin with stock, onion, and a touch of cream (or coconut milk) for a cosy autumn lunch.
2. Bake Pumpkin Muffins or Bread 🍞
Leftover pumpkin puree is brilliant in baking. Add it to muffins, bread, or even pancakes for a seasonal twist. It keeps bakes moist and adds natural sweetness.
3. Whip Up a Pumpkin Curry
Pumpkin works beautifully in a curry. Combine it with chickpeas, spinach, and coconut milk for a hearty veggie dinner that won’t break the bank.
4. Roast the Seeds
Don’t forget the seeds! Clean them, toss with a little oil and seasoning, then roast until crunchy. They make a tasty snack or salad topper.
5. Stir Into Pasta or Risotto 🍝
Pumpkin puree makes a creamy pasta sauce when mixed with garlic, herbs, and a little cheese. Or stir chunks of roasted pumpkin into risotto for extra flavour.
6. Treat Your Dog
Pumpkin is gentle on dogs’ tummies and can be a healthy treat in small amounts. Try mixing cooked pumpkin into their food (just avoid giving them raw pumpkin or the stringy insides).
7. Freeze for Later ❄️
If you can’t use it all straight away, freeze pumpkin puree in portions. That way you’ve got it ready to add to soups, stews, or baking throughout the winter.
Using up leftover pumpkin is a great way to save money, cut down on food waste, and make the most of the spooky season. So before you throw it in the bin, try one of these ideas and turn your pumpkin into something delicious. 😀
