Family Friendly Frugal Meals – Chocolate Fudge Pudding….

We tried really hard to stick to our meal plan last week after the disaster of the week before and I’m really pleased that for the most part we managed to stick to the meals we had planned and stayed within our budget.

This week we’ve got lots of comfort food planned as it looks like it’s going to be a cold one and this week’s family friendly frugal meal is the best comfort food of the lot – chocolate fudge pudding!  My mouth’s watering at the thought if it already….

Sunday – Sausage, mash and Yorkshire puddings.

Monday – Macaroni cheese with gammon in.

Tuesday – Quesadillas and home made wedges.

Wednesday – Spaghetti Bolognaise followed by chocolate fudge pudding.

Thursday – Ham and egg fried rice.

Friday – Home made pizza.

Saturday – Haddock fish fingers/salmon, chips and mushy peas.

Chocolate Fudge Pudding

Sorry that the recipe uses the American cups measuring system, I got this recipe from a forum I used to go on years ago and although every time I make it, I say to myself that I’m going to do the conversions, I’ve just never got around to it…. Next time maybe ;-)

  • 1 cup plain flour
  • 2 tsp baking powder
  • 1 tsp salt
  • ⅔ cup sugar
  • 6 tbsp cocoa
  • ½ cup milk
  • 2 tbsp melted butter or margarine
  • 1 tsp vanilla extract
  • 1 cup soft brown sugar
  1. Mix together the flour, baking powder, salt, sugar and 2 tablespoons of the cocoa powder.
  2. Add in the milk, melted butter and vanilla.
  3. Mix it until it’s smooth and then pour into a lightly greased baking dish.
  4. Next you need to mix together the remaining cocoa powder and the brown sugar and just sprinkle it over the mixture in the dish.
  5. Over the top of the mixture, you then need to pour 1 1/2 cups of just boiled water – DO NOT MIX IT IN.
  6. Bake in the oven for around 35-40 mins at 180c.
  7. While the mixture is in the oven, the sponge part of the mix rises to the top and underneath that there’s a lovely sticky chocolate fudge sauce.
