Family Friendly Frugal Meals – Roasted Chicken and Vegetables….

This week we’re following the Sainsbury’s ‘Feed your Family for £50.00 challenge’ which is a bit of a test for me as I usually like to stick to my old faithful recipes.   You can find all of the recipes on the Sainsbury’s website along with loads of others.

Monday – Lunch: Pate, tomato and cucumber sandwiches.  Dinner: Chicken and roasted vegetables with rice (recipe below)

Tuesday – Lunch: Ham, tomato and cream cheese sandwiches.  Dinner: Spaghetti Carbonara

Wednesday – Lunch: Carrot, cottage cheese and rocket pittas.  Dinner: Sausage, tomato and cannelini pot with mash

Thursday – Lunch: Salmon, rocket and red onion sandwiches.  Dinner: Tomato, spinach and red onion frittata

Friday – Lunch: Cream cheese and cucumber sandwiches.  Dinner: Tuna, mushroom and mozzarella bake

Saturday – Lunch: Toasted cheese baguettes and soup.  Dinner: Sweet and sour pork

Sunday – Lunch: Three bean and mackeral salad.  Dinner: Slow roasted pork with vegetables and roasties.

Sounds a lot more exciting than my usual doesn’t it?  I’m not sure how well the variety will go down with the mini frugals but we’ll give it a go ;-)

Here’s the first recipe from the weeks plan:

Chicken and Roasted Vegetables with Rice

500g carrots, peeled and cut into batons

500g parsnips, peeled and cut into batons

1 red onion, peeled and cut into wedges.

600g chicken thighs & drumsticks

1 x 410g tin chick peas, drained & rinsed

400g long grain rice

Olive oil

Mixed herbs

This is definitely my sort of recipe….

Preheat your oven to 190ºC, 170ºC fan, gas 5 and place the carrots, parsnips, onion and chicken in to a roasting tin. Drizzle with the oil, sprinkle with mixed herbs and season well with salt and pepper. 

Roast in the oven for about 45 minutes, until the vegetables are cooked and the chicken pieces are golden brown and piping hot, and the juices run clear. Turn once or twice during cooking.

Add the chick peas to the tin and cook for a further 10 minutes.

While the chicken and vegetables are cooking, cook the rice following the pack instructions. Drain and serve with the vegetables and chicken.

It actually looks as yummy as the picture on the Sainsbury’s website – not often that happens is it?
