Yummy Carrot Cake….

I normally bake with Miss Frugal because (a) she loves to make things, (b) she is at the age where she is able to do things for herself and (c) she doesn’t try and eat everything in sight every time I turn around. Yesterday, however, my baking buddy deserted me to go to her friends for a sleepover so I was left with Master Frugal to be my helpful assistant. To be honest he was more of a hindrance than a help but he had fun so it doesn’t really matter if he ate more of the mix than I managed to get in the oven!

I’ve never made a carrot cake before and was really surprised by how moist and yummy this cake actually was. Mr Frugal ate half of it and said it was actually the best cake he had ever eaten…. High praise from the self professed cake connoisseur!
(Not many photos of this cooking adventure due to the fact that every time I turned round, more of the mixture went missing lol)

Ingredients
2 eggs
1 tea spoon ground cinnamon
1/2 teaspoon nutmeg (optional, I know this as I forgot to put it in lol)
1/2 teaspoon bicarbonate of soda
2 finely grated carrots
185g melted butter/margarine
3/4 cup brown sugar
1 cup self raising flour


Mix the eggs, carrots, bicarbonate of soda, cinnamon, nutmeg until it looks like a thick brown mess….

Add the melted butter, flour and sugar and whisk the mixture until it is all combined.
Pour into a lined baking dish and bake at about 200 c for about half an hour (keep an eye on the timing as I was a bit stressed and forgot to time it accurately!)
Don’t forget to lick the bowl out as its gorgeous apparently!

The thing that makes the cake is the icing. I made Mr Frugal make this as it takes a fair bit of effort to combine the icing sugar with the butter and cream cheese.

Ingredients
30g butter softened
80g cream cheese
1 teaspoon finely grated lemon rind
1 1/2 cups icing sugar


Beat the butter, cheese and lemon together and then gradually mix the icing sugar in.
When it’s done cover your cake with the mix.


I made a small cake for my girlie night and a larger cake for home then I went for a quick bath, I came back downstairs and someone (no-one is admitting it lol) had melted some of the Green and Blacks cooking chocolate and poured it on the top of the larger cake. I wouldn’t usually recommend this but it actually tasted fantastic.
