Microwave Jam Sponge Pudding….

We love quick and easy recipes in the Frugal house and the microwave sponge pudding that we found is exactly that, in fact it’s so easy that Miss Frugal made ours tonight. She loves to bake and is learning to measure the ingredients out properly….
Ingredients:
100g sugar
100g butter / margarine
2 eggs
100g self raising flour
A few drops of vanilla essence
4 tablespoons of milk
Jam
Cream the sugar and the margarine (I think that’s the technical term – we just mash it with a fork) and then add the eggs, milk and vanilla essence. Mix it together and then add the flour to the mix and mix it a bit more.
Miss Frugal had great fun measuring out the ingredients and then doing all of the mixing herself.

Then layer the bottom of a microwave proof dish with jam, I used about five spoonfuls but to be hones it could have done with a bit more so just use your own judgement as to how jammy you want it to be.

Pour your cake mix over the top and then cover.
Put the bowl into the microwave and cook for about 4-5 minutes. I did it for three and a half minutes and checked it every 30 seconds after that.
Serve with custard and it’s ready – no more than 10 minutes from start to finish.
