Recipe of the week – Jambalaya


This weeks recipe is my standby favourite. I always try to keep the ingredients in to make this recipe as it is quick and easy and we all love to eat it.

Jambalaya

To make this, you will need:

chicken breast,
chopped chorizo
chopped into small chunks onion,
finely chopped red pepper, seeded and chopped
2 garlic cloves, finely chopped
long grain rice
1tsp dried thyme, oregano & chilli powder/flakes
2 tins chopped tomatoes (I like the ones with chilli in)
chicken stock (twice the volume of the rice)
a big squeeze of tomato puree

* In a large pan, cook the chicken until lightly browned.

* Add the onion and peppers to the chicken and cook until soft.

* Into the pan, add the garlic and rice and cook for 2 mins stirring constantly.

* Add the thyme, oregano, chilli, the chorizo and the chopped tomatoes. Cook for 2 mins.

* Pour in the hot chicken stock and bring to the boil, then cover and simmer over a low heat for 20 mins, or until the rice is cooked.

You can add loads of extra things like prawns, sweetcorn or forzen peas. I always add a dollop of natural yoghurt or fromage frais to it and it is so yummy and filling.

There is so much nonsense on the internet these days its hard to find anything worthwhile. I actually have cooked this recipe before, I got this book last month on recommendation from a friend http://ninjahq.com/go/cookingrecipes and it turned out really nice! I’m very eager to try your variation of it though, it looks fantastic. I think you might enjoy those recipes, they’re very good. Thanks for the article and tips.
